Sweet Potato Chicken Burgers with Onion, Apple and Cheddar Chutney (And Cucumber Tomato Salad side)5/16/2017 This recipe is one of my go-tos for leftover chicken and baked sweet potato. These burgers are only made with two ingredients! They make up quick, and can go with just about other sides or dressings. They are super versatile and easy to adjust depending on macros or what I have in my fridge or have a taste for. It's also super easy to add other ingredients to the chutney or the burgers. For the onion, apple and cheddar chutney, the cheddar is optional. I have also made this chutney with dried cranberries and it's to die for but is pretty high in carbs. Like always ingredient amounts can be adjusted as needed. This whole recipe, including the cucumber tomato salad is just over 300 calories! Ingredients
Instructions: For side salad: Combine cucumber, tomato, seasonings and liquids in a container and place in the fridge to soak (this can be done ahead of time). For Burgers: Shred chicken and combine with sweet potato, mixing until well incorporated, form into 2 patties. Place in the fridge to set up (about 5-10 minutes), heat griddle or nonstick skillet up on medium heat. Cook burgers for 8-10 minutes, flip and cook for another 5-8 minutes or until burgers have browned on both sides. (chilling is optional but makes them hold together better, optionally 2 tbsp of breadcrumbs can be added as well to help them stick together) For Chutney: slice apples and onion so they are a uniform size and cook over medium-low heat until onions have caramelized a bit and apples are soft. You might be asking, where does the cheese come into this recipe? The answer… Wherever you want it to. I have put the cheese in the burgers before cooking them, melted it on top of them after they have cooked, mixed it in with the chutney, and put it in with the cucumber tomato salad as cubes.
