The first time I made this recipe I had it for dinner and it is by far one of my favorite breakfast for dinner recipes. The consistency of the the crepe is a little different from normal crepes but still takes great and I find it more satisfying as well. This recipe turns a breakfast favorite into a healthy, filling and tasty muffin that’s good for breakfast, as pre or post workout snack or dessert. This recipe is quick and easy to make with simple ingredients and can be modified as needed or desired. Just about anything you might want to add in for "mix-ins" could work. My favorite is apple or chocolate chips but nuts, berries, or dried fruit could work as well.
This recipe calls for 2 cups of flour, this can be any combination or type of flour you have or want to use. I use 1 cup whole wheat and 1 cup of oat flour (pulverize oatmeal in a coffee grinder, food process or blender then measure). If using coconut or almond flour follow the substitution instructions on the packaging. |
